The Carnet tickets are valid for 10 trips. It is equal to 10x single tickets and each usage lasts 75 minutes. Your article says 5 trips. You don’t need to stamp it at the end… on the metro there is turnstiles on the exits but these open without a ticket.
The trick with a single ticket is to try not to use a bus before the metro if you can help it, as metro>bus you only have to stamp it on the metro, but bus>metro you are going to be stamping your ticket twice!

As for the ticket machines, there is lots of options, but there is another page in the list, keep going down and you will have a language option (its in the list of types of tickets, bit silly really). From there you can change to English quite easily.
